It is generally unknown to people that green and black olives grow on the same tree, only black ones ripen longer and thus give more oil. In addition, black olives are less bitter, and are harvested several months after the green ones. Olives, both black and green, contain numerous antioxidants, and some research has confirmed that they have properties that prevent the development of certain types of tumors. They are high in vitamins, especially vitamin E and substances that protect the vascular system.
