Balsamic vinegar Modena I.G.P has a syrupy consistency, dark and shiny color and is a pleasantly sweet-sour taste. The taste is intense, but fresh and balanced. It is excellent on seafood dishes, as well as with rice, pasta, white and red meat and cheeses. White balsamic vinegar is a superb bitter-sweet white spice due to the slow aging of the concentrate of white grapes mixed with top-quality ripe white wine vinegar. It has a warm transparent amber hue and a sweet and pungent citrus taste that delights the palate. It is perfect in fresh salads, vegetables, but also with fresh seafood, shellfish and white meat.
