Marcipan

The mystery of creation from sugar and almonds

 
One of the most famous and appreciated desserts, marzipan as we know it today, whose main ingredients are ground almonds and sugar, did not come about overnight. The predecessor of this flexible mass, pale yellow in color, with a fine aroma and rich taste, originated in Persia (modern Iran), and dates back to the 6th century. Back then, ”marzipan” was made from edible oils, almonds, and honey, its scent and aroma being enriched with a few drops of rose flower oil.
It is believed that marzipan similar to the one we know today originated in the Spanish city of Toledo and was brought to Europe by the Arabs at the beginning of the 8th century, with its main ingredient being almonds. At that time it was mostly a delicacy in monasteries and among the elite of society, and it was believed to have something holy in it, that is, that it was the work of God Himself.  That's why it was the main delicacy at church gatherings, especially on St. Mark’s Day to protect believers from evil.
Although the origin of marzipan is somewhat known, many legends arose with its arrival in Europe about how marzipan got its name. One of them says that in one Spanish province there was a shortage of wheat and people had nothing to eat, but since almonds were thriving in the province, an inventive individual named Mauricio came up with the idea of making bread out of almonds for people instead of wheat. Since the Spanish word for bread is ”pan”
, ”marzipan“ was named after its inventor. Another legend says that an employee of the first German pharmacy in Europe, named Mart, came up with the idea of mixing sweet syrup and ground almonds, thus creating this delicious mixture. Of course, so say the legends.
What is certain is that almonds originate from Central Asia and have been enjoyed for thousands of years. They were brought to Europe through Arab countries, and in Greece as early as the 4th century BC, ground almonds mixed with honey were used as a certain precursor to marzipan. The Arabs learned to produce and process sugar in the middle of the 6th century, whose discovery they spread throughout the world.
Regardless of the origin of the name, the fact is that even when it began to spread across Europe in the 18th century, it was a privilege only of the highest layers of society, and in 1806 in the German city of Lübeck, a marzipan factory opened exclusively for the needs of the nobility, which is still in operation today, producing one of the most famous European marzipans of the highest quality.
This exotic delicacy, which celebrates its existence on January 12 in America, served as inspiration to a Hungarian pastry chef who opened an entire museum dedicated to marzipan, adorned by incredible figures of various sizes and shapes, but also famous personalities made entirely of marzipan.
Once a food reserved only for kings, today everyone can enjoy this exotic mixture, and it is most commonly found as icing on cakes and filling in chocolates, or as sweet and tasty imitations of fruits, vegetables, and various animals.
